Your Meatless Monday Swap

Updated: Jun 22, 2021

Looking for a way to cut back on animal protein but unsure where to start? The thought of committing to a vegan or vegetarian lifestyle can be intimidating, but you don't have to marry a particular plant friendly diet to reap the well supported health benefits. Check out my favorite meatless twists on traditional meaty meals.

Sweet Potato Avocado Tacos:

I love how the sweet potato adds color, texture and a vitamin C punch. No sweet potato handy? No problem. This meal is still balanced in protein, carbohydrates, fat and fiber without it. Looking to make it dairy free or vegan? Just ditch the yogurt sauce.

Crispy Honey Sesame Tofu

Whether you are a tofu pro or new to the game, this recipe is for you. Tofu is a great meat alternative that is rich in calcium, iron and protein. Tofu can be baked, stir-fried, grilled and even scrambled!

Portobello Philly Cheese Steaks

I love a good cheese steak (I am only 20 minutes away from Philly after all), but I could definitely benefit from changing it up every now and then. Sure there are chicken cheese steaks recipes for a leaner option, but I just adore this clever swap using hearty portobello mushrooms.

Vegan Sloppy Joes

I encourage clients to keep their pantry stocked with dried beans, lentils and legumes. They're cheap, versatile, nutritious and have some serious shelf stability. If you enjoyed the the traditional sloppy Joe in the 90's, you may want to give this plant based version a go.
