    Shakshuka

Ever heard of it? Me either.....up until about a month ago and now I am seeing it everywhere from my favorite grocery store (Hey, TJs!) to swanky NYC brunch spots. Shakhuka is a traditional Middle Eastern and North African dish of poached eggs in stewed tomatoes and spices-the perfect combo if you ask me! This meal is enjoyed at breakfast, or any other time of the day. I like to keep mine simple and pair with a good quality toast for scooping and dipping. If you have some tim

    Your Meatless Monday Swap

Looking for a way to cut back on animal protein but unsure where to start? The thought of committing to a vegan or vegetarian lifestyle can be intimidating, but you don't have to marry a particular plant friendly diet to reap the well supported health benefits. Check out my favorite meatless twists on traditional meaty meals. Sweet Potato Avocado Tacos: I love how the sweet potato adds color, texture and a vitamin C punch. No sweet potato handy? No problem. This meal is still

    My Go-To-Fall Recipes

Although it doesn't feel like fall, more like August in Orlando, I've been utilizing the season's bounty and loving every crumb of it. Now that I have four mouths to feed, two tiny and two adult, it's really important for me to find recipes that fit everyones nutritional requirements and preferences. I need something that fits into the baby led weaning guidelines, while not too intimidating for a toddler, and still appeals to two hungry adults. Seems impossible now that I writ

Keeping Your Strawberry Haul Light: Simple and Clean Strawberry Recipes.

If you are looking for a way to eat healthy and still keep a budget, look no further than your own backyard. I like to practice what I preach, so we spent the weekend at a local farm picking strawberries, cherries, snap peas and beets. We got quite a haul and beacuse nothing gives me anxiety like food waste, I jumped on my "healthy meals" Pinterest page for some inspiration. While I would never slap the wrist of someone snacking on raw berries, I do, however, encourage clien

Sweet and Spicy Shrimp Over Couscous

This gloomy spring weather really inspires me to get into the kitchen and cook a hot meal. I finally re-stocked my freezer with some wild caught shrimp…one of my fav ways to add lean protein to meals….and pretend to be fancy… so I figured I would build my meal around these guys. I simply place the frozen shrimp under running cold water and it is ready to cook in minutes. I recently saw a recipe for sriracha shrimp and quinoa and it got my wheels turning. I never really pai

A Few More of My Favorite Food Finds

If you haven't noticed, this is an on going blog theme. I love sharing the foods I not only recommend you buy, but buy myself. Yes, we have more control in what we put into our bodies when we prepare food from scratch, but unfortunately our environment and hectic schedules get in the way of adhering to this philosophy 100% of the time. Luckily there are brands out there that cater to the struggle and offer options that are ready in the matter of minutes and without the scary

    Flour-less, All Natural,Black Bean Brownies!

I have heard about black bean brownies for some time, but have been way to skeptical to try it out for myself....until my chocolate cravings got OOC (out of control). After all, my Mexico vacation.... followed by my trip to Napa.... is upon us, so I would rather make mindful food choices now, than later. Right!? A true Sophie's choice, eh? I found a few potential starter recipes on Pinterest. I say “Starter”, because I always end up tweaking things to fit my health standards.

    Chia Seed Apple Pie Pancakes

I love pancakes...or anything sweet in the morning but tend to feel super guilty (shocker!) if my breakfast is lacking in some serious and satisfying nutrition. I had some extra time on my hands Tuesday morning, thanks to a certain toddler waking up at 4:50 am, and thought it would be extra special if I whipped up a hot breakfast. I recently picked up some chia seeds and thought this would be the perfect opportunity to mix-em-in. And since I love to use seasonal produce, I kn

    The Perfect Fall Meal

With the start of the crazy school year, football and cooler weather, fall is the perfect time to bring out the slow cooker. I love to use my crock-pot to cook large batches of soup to eat that day and freeze for the season. Soup is a great way to sneak in your veggies (frozen or fresh) along with some lean protein to make an overall balanced and low cal meal in one bowl. I don’t always follow a recipe since I like to utilize what I have on hand, but if I did, it would look s
